Fermentation takes place over 11 days via the maceration semi-carbonique technique, also called “Vinification Beaujolaise”. This gives the wine a fruity character and a supple taste structure. After fermentation, the wine matures for 6 months in cement tanks and then 4 months in the bottle.
Originating from the lieu-dit ‘Aux Caves’ in the appellation Moulin-à-Vent. This vineyard is situated on a granite base, at an altitude of 220 metres, and faces south/south-east. The vines are 45 years old. The grapes are hand-picked and selected in the vineyard.
The domaine produces 4 crus of the Beaujolais A total of 16 hectares and benefits from the best granite terroirs.
Domaine Anita is a relative newcomer to the Beaujolais. Anita Kuhnel started her own vineyard in 2015 after working on the family farm for 15 years.
The Domaine, located in Chénas, manages 6 appellations.
