The grapes used in our wine production are carefully hand-harvested during a period spanning from late August through September and into early October. These grapes are grown in our vineyards, which are meticulously managed using the Guyot system, and we maintain a planting density of 4,000 plants per hectare, resulting in an average yield of approximately 1,800 grams per plant.
One of the standout characteristics of our wines is the presence of gentle tannins, with a captivating finish that reveals subtle notes of cocoa, coffee, and vanilla. To achieve this exceptional flavor profile, our wines undergo an aging process in medium-toasted French oak barriques for approximately eight months. It is during this time that the wine matures to its fullest potential, and the final blend is expertly crafted.
CignoMoro is a small, family-owned business with immense potential, and our winery is nestled within the renowned Primitivo di Manduria DOC, at the heart of the Salento Peninsula. This unique location allows our wines to reflect the distinct tastes and characteristics of the region, enriched by the coastal climate and the intense sunlight that is crucial for grape development.
We take great pride in our environmentally conscious winemaking practices. At CignoMoro, we prioritize sustainable viticulture, with a minimal or even zero reliance on pesticides. Our commitment to preserving nature’s balance is reflected in every bottle we produce.
