Traditional Fermentation & Aging
This Summum Saint-Anne Pinot Noir wine undergoes traditional fermentation in stainless steel tanks, with a short fermentation period. The cap is punched down for maximum extraction. The wine then matures for 6 months in oak barrels, adding depth and complexity.
