Introduction

Delheim is a prestigious winery located in Stellenbosch, South Africa. With a strong focus on quality and sustainability, Delheim is among the most respected wine producers in the region.

One of the standout wines in its portfolio is the Chenin Blanc Wild Ferment, a product that masterfully combines tradition and innovation.

Vineyards & Terroir

The Chenin Blanc Wild Ferment originates from two vineyards on the Simonsberg mountain: Ou-Jong (220 meters altitude) and Bobbejaan (420 meters altitude). These plots contain some of Delheim’s oldest Chenin Blanc vines, planted in 1986. Due to their age, these vines produce grapes with exceptional concentration and complexity. The wine is Certified Heritage Wine by South Africa’s Old Vine Association, underscoring the unique value of these vineyards.

Winemaking Process

The grapes are hand-harvested in the early morning and immediately transported to the cellar to preserve their freshness. After destemming and gentle pressing, the juice undergoes a cold soak for two days to enhance aromatic extraction.

Fermentation occurs spontaneously, without added yeasts (wild fermentation), contributing to the wine’s distinctive character. 70% of the juice ferments in concrete egg-shaped tanks, while 30% matures in large oak barrels.

Following fermentation, the wine ages for 9 months on the lees (‘sur lie’), adding extra complexity, refined texture, and an enhanced flavor structure.
