The vineyards are located in the heart of the Valpolicella area, on the oldest hills.
The vineyard faces south. The vines grow according to a pergola system.
Made according to the traditional preparation of Amarone della Valpolicella.
The grapes dry until the end of February. In the process, 45% of the weight (water) is lost.

When then pressed, the must is concentrated and full-sweet. It is slowly fermented, for four months, in stainless steel tanks until it is completely dry. After fermentation, the wine matures for two years in large French oak barrels.
The wine then rests in bottle for several more months before being released on the market.

Just north of Verona is Cantine Giacomo Montresor. Montresor is an Italian winery with a long history and tradition of winemaking, originating in Orleans in the heart of France, where Claude de Montresor was Duke around 1600.
In 1892, the family came to Veneto where they established a winery, now among the traditional wineries for Amarone and Ripasso. The Denominazione di Origine Controllata e Garantita (DOCG) is the highest classification for Italian wines, requiring strict production rules and quality controls.
