Moulin-à-Vent ‘Aux Caves’: An Exceptional Cru from Domaine Anita

This outstanding Moulin-à-Vent wine comes from the lieu-dit ‘Aux Caves’ in the Moulin-à-Vent appellation, one of the most prestigious crus in the Beaujolais region. The vineyard is situated on a soil of weathered pink granite, at an altitude of 250 meters, with an ideal southeast-facing orientation. This unique terroir, combined with 85-year-old vines, forms the foundation of a wine with exceptional depth and elegance.

Craftsmanship in Vineyard and Cellar

• Hand Harvesting and Rigorous Selection:

The grapes are hand-picked and carefully selected in the vineyard to ensure that only the best fruit is used.

• Vinification:

For this wine, 30% of the grapes are destemmed. Fermentation lasts for 13 days, with daily remontage (pump-overs) to extract additional flavor, color, and tannins. This meticulous process provides the wine with its characteristic strength and structure.

• Aging:

After fermentation, the wine matures for 11 months in a combination of oak barrels and cement tanks, creating a perfect balance of complexity and freshness. It is then further refined with 3 months of bottle aging.
