Traditional Fermentation & Maturation This Summum Saint-Anne Pinot noir wine undergoes traditional fermentation in stainless steel tanks, with a short fermentation period. The cap is beaten down for maximum extraction. The wine then matures for 6 months in oak barrels, adding depth and complexity. Vineyards between Narbonne and Limoux The grapes are grown in the beautiful vineyards located between Narbonne and Limoux, along the route to the Pyrenees.
