Traditional Fermentation & Maturation
This Summum Saint-Anne Pinot noir wine undergoes traditional fermentation in stainless steel tanks, with a short fermentation period. The cap is beaten down for maximum extraction. The wine then matures for 6 months in oak barrels, adding depth and complexity.

The grapes are grown in the beautiful vineyards located between Narbonne and Limoux, along the route to the Pyrenees. This region offers a unique combination of soils and microclimates, allowing our wines to develop a rich palette of nuances, aromas and floral notes.
