The Vinification Process<\/b><\/b><\/p>\n

The grapes come from vineyards around Limoux in the Languedoc, enjoying a Mediterranean climate. The vines are 18 to 26 years old.<\/p>\n

After harvesting, the grapes undergo maceration at 10\u00b0C for three days. Fermentation takes place at 25\u00b0C for five days. After fermentation, the juice remains in contact with the skins for an additional 10 days to extract more color and flavor. Only the juice from the first pressing is used for the wine. Finally, 20% of the wine is aged in new American oak barrels for four months.<\/p>\n
