After the fermentation process, a portion of the wine undergoes malolactic fermentation within oak barrels, which transforms the sharp apple acids into milder milk-like acids. Meanwhile, the remaining wine continues to mature in stainless steel tanks on lees, also known as ‘sur lie,’ contributing to a softening effect and enhancing the wine’s complexity.

Roeno maintains vineyards in various origin areas, including the relatively youthful IGP Vallagarina for Marzemino and Teroldego. The Rìvoli region, nestled between the town of Affi and its headquarters in Brentino Belluno, is regarded by Roeno as the prime location for Pinot Grigio.
