The Vinification Process

The grapes come from vineyards in Limoux, where the Mediterranean climate is tempered by altitude (150–250 meters), providing a cooling effect. The vines, aged between 12 and 30 years, yield fruit of remarkable quality.

After harvesting, maceration occurs at 10°C to extract aromas and flavors. The must undergoes fermentation in two phases: one day at 27°C, followed by four days at 24°C. Post-fermentation, the juice remains in contact with the grape skins for an additional 10 days. During this period, the “cap” (the skins that float to the surface) is regularly submerged to enhance the wine’s structure, flavor, and tannins. A quarter of the wine then matures in American oak barrels—20% of which are new—for four months.
