Originating from several vineyards in Chile’s Central Valley, this region is known for its clearly defined seasons with cool, rainy winters and warm summers. The distinct difference between day and night temperatures allows the grapes to ripen optimally, contributing to the unique flavour profiles of the wines from this region.
The grapes undergo a cold skin maceration to capture the fresh, fruity character of Sauvignon Blanc. This process helps to concentrate the aromas and flavours. The juice is then fermented in stainless steel tanks at a temperature of 10 to 12 degrees Celsius. This controlled fermentation creates a pure, lively wine with a distinct character.
