The grapes come from selected vineyards in Languedoc, between Narbonne and Limoux. The grapes soak together with the skins at a low temperature. The wine is then fermented in stainless steel tanks at a controlled temperature of 20 degrees. The wine then matures in oak barrels, half of which are new.
