Sourced from a vineyard in ‘Favara San Cataldo’ at about 500 metres above sea level. The vineyard faces south and has a soil of clay and sand.
After destemming and a six-day skin soak, the grapes are gently pressed and fermented in stainless steel tanks at a controlled temperature.
The wine matures for several more months in stainless steel before bottling.
After the Italian general Garibaldi’s revolt against the French Bourbon dynasty in 1860, the local Sicilian economy moved quickly. It was at this time that Vito Curatolo Arini had a winery built for his vineyards, whose grapes he had until then supplied to cooperatives.
Vito’s dream was to make premium wines in his native Marsala that would be recognised by the whole world.
This was achieved partly thanks to Englishman John Woodhouse, who earlier invented the fortified wine Marsala so that it could be shipped to England.
Today, Curatolo Arini is considered the top producer of Marsala fortified wines. His Marsalas are on the menu at many a Michelin-starred restaurant.
