It all begins in the vineyards, where careful grape selection is essential for creating outstanding wines. Cignomoro boasts strategically located vineyards between Manduria and Carosino, known as the “red lands,” where the soil and climate are perfect for grapes like Primitivo and Negroamaro. Once the grapes are perfectly ripe, they are hand-harvested, with only the finest clusters selected for further processing. Upon arrival at the winery, the grapes are carefully crushed and fermented in small vats under strict temperature control. For Cignomoro’s Primitivo and Negroamaro wines, an extended maceration period of over a month is employed, allowing the grape skins to remain in contact with the juice to extract maximum color, flavor, and structure.
After fermentation, the wines are transferred to stainless steel tanks and partly to barrels for further aging. This stage of the process enables the winemaker to integrate and refine the different components of the wine, enhancing complexity and texture.
Finally, the wines are meticulously bottled and rest for some time in Cignomoro’s cellars before being released for sale. This period of rest allows the wines to further develop and harmonize, making them ready to be enjoyed by enthusiasts around the world.
