Sourced from various vineyards in La Consulta and Chacayes in the Uco Valley (Mendoza, Argentina), situated at high altitude along the foothills of the Andes. The significant difference between daytime and nighttime temperatures allows for slow and even ripening, resulting in greater finesse. The alluvial soils with rounded stones and sandy layers provide excellent drainage, naturally limiting yields and producing grapes with notable concentration.
The Cabernet Sauvignon grapes are fully destemmed, after which the must remains in contact with the skins for three days to gently extract colour and aromas. Fermentation takes place in stainless-steel tanks at a controlled temperature of 26 to 29°C and lasts for around eighteen days. The wine is then aged for thirteen months in used oak barrels, predominantly French oak, complemented by a small portion of Caucasian and American oak.
Trapiche, Founded in 1883, the estate today manages over 1,200 hectares of its own vineyards and works closely with more than 300 local growers to select grapes from the finest terroirs of Mendoza. This access to a wide range of microclimates and soil types ensures consistent quality and a clear expression of origin. Precision in vinification and respect for the natural character of the grape highlight the refined style associated with the high-altitude vineyards of the Uco Valley.
